In fact, places that truly insist on the ultimate taste of onion soup fry onions for over 12 hours, so the importance of this frying process in onion soup is self-evident.

By the way, there are recipes that add sugar or soda to accelerate this caramelization, but that recipe was unusable in my current situation.
