The important part of cooking chicken isn’t the frying process but the preparation before frying.

Flour is divided into high-gluten, medium-gluten, and low-gluten based on the gluten content in the protein.

Higher gluten content makes the flour more viscous when mixed, which is why each type has different uses.

High-gluten flour is used for bread, medium-gluten for noodles, and low-gluten, which has less viscosity, is suitable for frying or pancakes.

But the problem is that in this world, flour isn’t classified by usage.

Well, maybe some specialty stores catering to noble families might sell flour classified by usage, but at least in Astram’s market, flour isn’t sold that way.

So, I spent quite a bit of time over the past few days looking for a store that sells flour by usage.

The low-gluten flour I finally found is just one of the ingredients needed for the frying batter.

I added salt and sugar to give the batter itself a savory flavor.

Then, I added starch and yeast.

I would’ve preferred baking powder over yeast, but apparently, they don’t sell such convenient ingredients.

Actually, even finding yeast took some effort.

If they didn’t sell yeast, I would’ve had to spend time making beer yeast myself.

After mixing all the ingredients, I poured the powder into milk to make a thin batter.

I grated that bread to make breadcrumbs.

After all that, all that’s left is frying.

First, I rolled the chicken pieces coated in batter in the breadcrumbs to create a double layer of coating.

But before frying the chicken, I tested the oil by dropping a small piece of batter in.
